Average vine age: 21 years
Soil & cultivation : Arid, stony, clay & limestone soil. Vines cultivated organically. Ploughed, with no use of chemical fertilisers or pesticides.
Yield: 26 hectolitres/hectare
Vinification : Once hand sorted on tables, the grapes are gravity fed into vats. No yeast. Traditional vinification with alternating cap immersion and juice circulation. Four weeks maceration. Pneumatic pressing
Aging: 36 months in stainless steel vats. Bottled in September 2006. Neither fined nor filtered.
